Hailing from the vibrant coastal state of India, Goa Nelroy Rebelo is more than just the co-founder of Nutmeg Indian Eatery — he’s also the heart behind its kitchen. When the COVID-19 pandemic struck, Nelroy stepped into the role of chef, driven by resilience, passion, and a deep love for food. Over the past five years, he has not only gained hands-on culinary experience but also successfully led the restaurant’s daily operations, ensuring consistency in flavor, quality, and guest satisfaction.
With a keen eye for fusion and creativity, Nelroy brings his Goan heritage to life through bold and comforting dishes that reflect a blend of Indian and global influences. His ability to manage both the front and back of house makes him a rare talent — balancing flavors in the kitchen and harmony across the restaurant.
